It is used as functional or nutritional ingredient in a wide variety of food products, mainly in breakfast cereals, baked foods and in some meat products. It is used in meat and poultry products to increase water and fat retention and to improve nutritional values. It is a spray dried, free flowing, slightly hygroscopic powder obtained from high grade defatted soya bean meal.
It is about 65-70% soya protein and is basically defatted soya flour without the water soluble carbohydrates. It is made by removing part of the carbohydrates (soluble sugars) from defatted soybeans. The offered products retains most of the fiber of the original soybean.
